As I was preparing the starter two days before bake day a panic set in. I noticed a some dark spots on top of Shania and a thin watery film through the side of my jar. I called my dad in a panic wondering if my starter had rotted or had been contaminated.

Luckily she was just dying a little bit and could be saved. I scraped the top layer off and fed her. However, she needed to be fed again before I could bake.

When I started thinking about baking sourdough I thought it would be a nice low stress, ongoing project. It turns out you have to be at home a lot more than I was planning on and working full time plus being a freelancing musician in the city, I'm never home. Thus, when I realized I would have to feed Shania twice before I could being the baking process I was a little discouraged that I would have to wait another week before working on my next loaf.
