Welcome to my sourdough bread journey!


A very important introduction to start: this is my sourdough starter, Shania (affectionately named after the QUEEN Shania Twain), a 23rd birthday gift from my dad a few weeks ago.


I want to document my journey here as a way to keep track of my progress and make some great bread! This is my first loaf, after three days she is finally here...and gone. My partner and I rapidly consumed this loaf in two days because it was so good. I'm quite excited for the next round after this.


I was not prepared for the hours and hours over three days that I would have to be home to work on this. However, after some careful planning I was able to find some time. It was very cathartic and relaxing to be home for hours at a time folding and resting the dough every 30 minutes while simultaneously practicing or doing some laundry.


Reflecting on round one, I'd say it was a success but I definitely have some pointers for myself:

  • I baked this loaf on a stone with some water in the bottom of the oven to create steam. The loaf was slightly flat and I wonder if this was a contributing factor. Without a dutch oven I need to troubleshoot

  • My bread lame cuts were too shallow :) Maybe I'll try a pattern next time

  • I think that letting the last proof sit for longer will also help with the loaf rising a bit more. This round I had to leave for a rehearsal and cut the time a bit short
